Be sure to not overbake. Bake until toothpick inserted comes out clean.

Lemon Glaze

While the cake is still warm make a simple glaze out of powdered sugar and freshly squeezed lemon juice. Pour the lemon glaze over the baked cake. Glazing is different from frosting! The frosting is applied to a cake that has been cooled completely!

Serving and Storage

Do not overbake this cake! The cake is done when the toothpick inserted in the center comes out clean. Cool cake in pan for 10 minutes before removing.

Loosen the cake from the sides of the bundt pan with an offset spatula and turn it out onto a wire rack to cool.

Store in an airtight container.

  1. Hello, Kim I used gelatin for a rich lemony flavor, it also adds to the moist texture.

  2. Oh no Pam, I make this cake all the time and love it. A couple of things you didn’t also add the ingredients the cake mix box calls for. In this recipe we are only using the dry mix and then adding the other ingredients from the recipe list. I also usually never have trouble just baking it longer without it falling if it needs more time. I would think an extra 10 or so minutes would have done the trick. I am so sorry you didn’t have luck.

  3. This cake looked so good but I’m terribly disappointed. Just baked it the 30 minutes, timer went off. I opened the oven door, my cake flopped! And, the toothpick came out still sticky. Boohoo, this was a fail for me, not to mention the cost of my ingredients.

  4. I had the same experience. I used a Berry Crocker mix that has pudding in it. I think that might be the cause. I continued to let it cook and it ended up being like a cake donut. Still yummy!

  5. Bonnie, typically about 10 minutes will work. Don’t wait much longer because the glaze is best poured over the warm cake.
