Here is a super simple and quick recipe. Keep canned evaporated milk and pasta in the pantry and this can be a go to dish on busy days!

Homemade Macaroni and Cheese Recipe

  • 1 box shell pasta (about 12-14 ounces — I used mini shells) (macaroni works also)
  • 4 tablespoons butter
  • 4 eggs
  • 1 – 12 oz  cans evaporated milk
  • 1/2 teaspoon hot sauce
  • 1 teaspoon kosher salt
  • Fresh black pepper
  • 1 teaspoon dry mustard
  • 16 ounces cheddar, shredded (about 4 cups)

In a large pot of lightly salted boiling water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir egg mixture into the pasta and add the cheese. Continue to stir over low heat for 3 minutes or until creamy.

  3. Kathy D: I was just about to say this looks like Alton Brown’s recipe I’ve made many times. My kids and hubby don’t like the cheddar. They always want the pasta noodles with kraft singles on top. LOL

I try to find lots of replacement box versions and post them on my website like pretzels, chicken pot pie (without a can), pumpkin bread, and fruit pizza with a homemade crust.

  5. I use Alton Brown’s stove top macaroni and cheese all the time and it is very similar to this one. I LOVE it! I find it tastes a enough like the boxed brands (which tricks my picky eater) but I know exactly what is going in it which makes me feel better. Thanks for posting this recipe!

  7. Thank you, thank you, thank you! I’ve been looking for a good stovetop recipe for years. (I’m *not* a baked mac and cheese person.) Most of the recipes I’ve tried aren’t creamy enough for my tastes, but this looks like a winner. I’m going to round up the ingredients and try it very soon.
